We take our name from a singular sherry produced in the Marco de Jerez wine region in southern Spain. Palo Cortado has been called a legend, a rarity, and a happy accident.
A wine born to be an “Amontillado” sherry, raised under a veil of flowers and for some reason a few barrels develop certain characteristics that give it the body and roundness of an “Oloroso” sherry. Palo Cortado is a wine with its own personality as if rebelling against its imposed destiny.
We would like to think that there is some of this spirit in our cooking, tradition without resisting change. Solera aging and imagination.
We focus our cooking on the product. Grilled dishes such as octopus legs, squid on pancetta and truffled Parmentier, high angus tenderloin, loin of Iberian pork …
We are very aware of our mother’s cooking, Andalusian and Catalan. From Andalusia comes our fried fish, oxtail, gazpacho from Cordova (salmorejo) … From Catalonia rice dishes from the Ebre delta, “sea and mountain” cuisine…
We make some nods to other cuisines that we are passionate about, like the Japanese with our tuna Tataky with garlic and almonds cream (ajoblanco), or Peruvian ceviche…
We learn every day from our customers and fellow chefs. We like to think our best meal is yet to come.
In the meantime, we try to bring joy to our work, and much, much love for well-made cuisine.
